The freshest culinary ingredients are measured by the distance from farm to table. Sustainability is equally as important and the resort tends a 5,000 square-foot organic garden located outside the resortís unique Sunday House. The garden currently contains tomatoes, squash, beets, radishes, and several varieties of lettuce, peach trees, avocado trees, bay leaf trees, fig trees, lavender, basil, rosemary, chives, sage and numerous other herbs. Fall and winter will bring the addition of cabbage, brussel sprouts and root vegetables. Products from the garden are used at 18 Oaks Steakhouse. The garden is kept completely organic with the use of natural pest control such as praying mantes and ladybugs. In the immediate future, there are plans to expand the garden to include several varieties of beans and a greenhouse that will house micro herbs and several types of lettuce throughout the fall and winter.
The resortís culinary team believes in utilizing the rich and flavorful produce, dairy and protein all hand-raised and produced just miles from the property. They have formed numerous relationships and exclusive partnerships with ranches and farmers across the Texas Hill Country and the State of Texas.
