Organic Garden
The freshest culinary ingredients are measured by the distance from farm to table.
Sustainability is equally as important and the resort tends a 5,000 square-foot organic garden located outside the resort’s unique Sunday House. The garden currently contains tomatoes, squash, beets, radishes, and several varieties of lettuce, peach trees, avocado trees, bay leaf trees, fig trees, lavender, basil, rosemary, chives, sage and numerous other herbs. Fall and winter will bring the addition of cabbage, brussel sprouts and root vegetables. Products from the garden are used at 18 Oaks Steakhouse.
The garden is kept completely organic with the use of natural pest control such as praying mantes and ladybugs. In the immediate future, there are plans to expand the garden to include several varieties of beans and a greenhouse that will house micro herbs and several types of lettuce throughout the fall and winter.
Local Purveyors
The resort’s culinary team believes in utilizing the rich and flavorful produce, dairy and protein all hand-raised and produced just miles from the property. They have formed numerous relationships and exclusive partnerships with ranches and farmers across the Texas Hill Country and the State of Texas.

Windy Bar Ranch, Stonewall, Texas: The resort recognizes the high quality of the Windy Bar Ranch black angus beef and features the Ranch’s special dry age beef at 18 Oaks Steakhouse. The resort’s fine dining restaurant obtains much of its menu from this cattle ranch. The close proximity of the ranch to the resort allows guests to experience the freshest and best cuts of Texas beef.
Thunder Heart Bison, Texas Hill Country: Grass-fed bison contains one of the highest know concentrations of omega 3 fatty acids. High in selenium, beta carotene, taurine, and the all important CO-Q 10. The grass and field harvesting are the foundations of the nutritional profile that make Thunder Heart unique. Bison from this ranch is used in dishes throughout the resort. The ranch also supplies guajillo jelly to the resort.
Texas Olive Ranch, Dallas, Texas: Texas Olive Ranch 100% Pure Texas Extra Virgin Olive Oil is pressed from arbequina variety olives. The arbequina variety was developed in Spain and is especially suitable for growing in the sandy loam soil of the Middle Rio Grande Valley in Texas, where the climate is very similar to southern Spain. The resort restaurants and kitchens use this top grade olive oil.
Brazos Valley Cheese, Waco, Texas: These hand-made and house aged cheeses are produced near Waco, Texas utilizing local Grade A, Jersey cow milk. Brazos Valley Cheese is used in the signature macaroni and cheese served at Cibolo Moon and other restaurants throughout the resort.
Mozzarella Company, Dallas, Texas: A consistent American Cheese Society Award Winner, this handmade, fresh mozzarella is a staple in many of the resort’s dishes. The Mozzarella Company provides the resort with handmade mozzarella cheese that follows a centuries-old recipe.
Pure Luck Dairy, Dripping Springs, Texas: Pure Luck is a family farm and goat dairy made up of 100 Nubian and Alpine goats on certified organic land on Barton Creek in Dripping Springs, Texas. They specialize in handmade artisan goat cheese used throughout the restaurants and kitchens at the resort.
Veldhuizen Farm, Dublin, Texas: A small, family run dairy and cheese maker, the Veldhuizen Farm supplies the resort with its unique Texas Gold Cheddar a classic buttery cheddar and Redneck Cheddar made with St. Arnold’s dark beer.
Lucky Layla, Plano, Texas: This third generation dairy produces high quality milk and artisan dairy products from award-winning Guernsey and Jersey cows. The all-natural, premium milk and butter from Lucky Layla is served throughout the resort.
CKC Farm, Blanco, Texas: Produced just up the road from the resort on a small family farm, this handmade, fresh goat cheese is used in the resort restaurants.
Whittington’s Jerky, Johnson City, Texas: A 50 year old Texas tradition, this all natural beef jerky is offered throughout the resort except in 18 Oaks Steakhouse where it is homemade by Chef Surprise.
Best Maid Pickles, Fort Worth, Texas: An 80 year old Texas tradition, these pickles are used throughout the resorts restaurants.
Cin Chili and Co., Houston, Texas: Founder, Cindy Reed Wilkins is the only person to win the Terlingua International Chili Championship two years in row. Her family run business, Cin Chili produces the hot sauce used throughout the resort restaurants.
Psencik Peaches, Fredricksburg, Texas: Sweet and juicy Texas Hill Country peaches are a summer tradition. This small family orchard provides the resort with these ripe, sweet beauties only available during June, July and August.
Hill Country Homestyle, Fredricksburg, Texas: A unique local business, Hill Country Homestyle practices the old German tradition of canning fruits and vegetables. Led by a husband and wife team, Hill Country Homestyle utilizes traditional old world recipes passed down from their grandparents. Some of their products the resort uses include jelly, jam, preserves and candied jalapenos.
Local Farmers Markets: Chefs from the resort make weekly trips to the various farmers markets in the area always seeking the freshest ingredients for every dish served.
Hairston Creek Farm, Burnet, Texas: Chef Jeffrey Surprise of 18 Oaks Steakhouse visits this farm’s booth at the Fredricksburg Farmers Market weekly.
